For best results, a large yeast starter is highly recommended, or else you will need to purchase multiple packages of yeast. Due to the high alcohol content, purchasing a small package of champagne yeast to add before bottling to ensure carbonation is recommended.
For the 5-gallon batch, because of the huge grain bill, the mash alone will need 6-7 gallons of water. A large mashtun of at least a 10-gallon capacity should be used. If you do not have a mashtun of at least 10-gallon capacity, we offer a partial extract version of this beer that will product excellent results. A secondary fermentation is recommended.
