This is a big, bold, and strong version of the American Barleywine. This beer has a complex flavor and aroma that only gets better with age. Full of character this malty beer, still balances with is amazing amount of hops. the Malty and rich flavor comes from the notes of caramel, toffee and raisins. keeping you warm on even the coldest day. Measuring your ABV at a WHOPPING 9.6- 10+%,You will be savoring the complexity of this barleywine. Be sure not to drink all of this so you can keep a few bottles to try in the years to come, as this beer will continue to mature and become more complex with age.
For best results, a large yeast starter is highly recommended, or else you will need to purchase multiple packages of yeast. Due to the high alcohol content, purchasing a small package of champagne yeast to add before bottling to ensure carbonation is recommended.
For the 5-gallon batch, because of the huge grain bill, the mash alone will need 6-7 gallons of water. A large mashtun of at least a 10-gallon capacity should be used. If you do not have a mashtun of at least 10-gallon capacity, we offer a partial extract version of this beer that will product excellent results. A secondary fermentation is recommended.
