Imperial's Monastic strain has a high alcohol tolerance and produces a alot of phenolic and ester characteristics which makes it a the best choice for Abbey ales, Quads and dark Belgian beers. This strain may start slow but will dry out high gravity wort, and it has relatively low flocculation so expect it to stay suspended for a long time after fermentation is complete.
