This Mexican Pilsner was originally developed by German immigrants, but over the years it became the lighter beer, not unlike it's American cousin, the American Lager with the addition of corn syrup.  Dos Equis (XX) was named by the original German brewmaster, Wilhelm Haase who created the beer around the turn of the century or XX in Roman letters.  Although this beer shares it's name with XX Amber, they are very different styles (XX Amber is a Vienna style lager).  This is a lager, so it must be fermented at a lower temperature.
