We brew a lot of Kölsch around the office, so we were excited to see this new Kölsch dry yeast from Lallemand. Sometimes having a dry yeast on hand is nice because of it's long shelf life. This yeast is made for Kölsch, but can also be used for other neutral ales. This yeast has a beta-glucosidase enzyme (Lalbrew Köln™) that can promote accentuate hop flavor, aroma and biotransformation. This very subtle fruit forward ester at lower temperatures will give you that Kölsch flavor you desire. At warmer temperatures it becomes much bolder. Although we love Imperial Yeast's Dieter for it's excellent excellent flavor and rapid fermentation, this is a great alternative when you want to use a dry yeast.
