Sugars

The sugars under this category can all be used in the brewing process to add additional alcohol content to your brew, except for Lactose.  The other use for these different sugars is to modify the taste of your beer to fit the style. Some sugars like Lactose (Milk Sugar) gives a very specific taste profile, a creamy, sweet flavor. Other sugars like like Belgian Candi Syrup are important for certain regional beers from Belgium (although they are used in other beer recipes).  Honey is another sugar that is often used for a specific flavor, although most of it is fermented away. Experiment with different sugars to see how they effect your beer, but don't tell the Germans or you will be in trouble for breaking the Reinheitsgebot!
